Egg Yolks Egg yolks are high in dietary cholesterol -- each contains about 213 mg. So, limit egg yolks:
On the Step I diet, eat no more than 4 egg yolks a week.
On the Step II diet, eat no more than 2 egg yolks a week.
This includes the egg yolks in baked goods and processed foods.

Egg Whites Egg whites have no cholesterol, and you can substitute them for whole eggs in recipes -- two egg whites are equal to one whole egg. You can also buy egg substitutes and use them instead of whole eggs -- in many baked goods, you can't tell the difference.
